Meal Plan Week of 1/12-1/18

So, how's everyone doing with their meal planning? Are you new to meal planning or have you been meal planning consistently for a while? Either way, I hope you find a helpful recipe or idea in my weekly meal plans! I will do my best to post my weekly meal plans on Fridays/Saturdays, so you have plenty of time to shop for ingredients. Once you get in the habit,
I think you will find the week at least a tiny bit less stressful knowing "what's for dinner"! Thank you to those of you who reported back that you went out and bought the materials to set up a cute menu board, so nice job! In our house, we have been sticking to my meal plans pretty well, the only issue I ran into last week was not having enough leftovers for "leftover" night. So I pulled out a batch of frozen meatballs and sauce, boiled up some noodles and we had a quick dinner right from the freezer. I was also a little disappointed  when the crockpot black bean soup (new recipe) I made on Monday night was sub-par. We all agreed it was too watery and really had to doctor it up with cheese, sour cream, and hot sauce to give it more flavor, but we did eat it. However, it wasn't blog-worthy and I am now even more determined to create a perfect Crockpot Black Bean soup for a super easy Meatless Meal.

Ok, so here it is, this week's meal plan:

Sunday: Slow Cooker Pork Tenderloin with Cranberry Orange Sauce, baked potato, broccoli
*Dawn shared this with the Fresh Mamas and declared it a big hit in her family.  She made it with Fresh Cranberry Sauce from our FMCC cook day. I have some in the freezer, so I cannot wait to try this! She served it on Christmas Eve, so this dish is not only easy, but also fancy enough for a dinner party. Thank you, Dawn!

Monday: Slow Cooker Black Bean Soup (attempt #2!) Fresh bread (in the bread machine)

Tuesday: Chicken Lettuce Wraps, steamed bok choy, orange slices
*Janice shared this recipe recently and I just knew it had to go on the meal plan this week. These are all flavors my kids love and I'm sure they will have a blast putting together the wraps. Thank you, Janice!

Wednesday: Leftovers

Thursday: Creamy Mushroom Pasta with Caramelized Onions and Greens, salad
*I found this recipe on Pinterest and have been dying to try it with items from my CSA box. Will post the recipe if it is tasty!

Friday: Family Dinner out

Saturday: Baked Cod, Balsamic Roasted Veggies (using fresh produce from my weekly CSA box)

    1. Becky, it was yummy! I couldn't get tenderloin so I used country style ribs from the freezer. The whole family enjoyed it and I'm thrilled to have a reason to make cranberry sauce! Saw your orange glaze cookies. Definitely making those! I subscribed to your blog, too:)

  3. Great! i am so glad you liked it. I agree, that cranberry sauce would pair with any pork! The orange glazed cookies are favorites! A great soup I have blogged (but took horrible pictures of) is Cat Cora's Avgolemono Soup. I have it listed in the Greek section - it is a recipe for Lemon Chicken Soup with rice and my picky kids love it as much as the adults do.
