Apple Cider Vinaigrette

As we continue to make use of our Roasted Butternut Squash, I decided to make a homemade salad dressing to bring out the flavors of this perfect winter salad. Simple, elegant, and delicious -- mixed greens, sprouts, feta cheese and butternut squash. All lightly tossed with this sweet and tangy Apple Cider Vinaigrette. I served it as a side to my homemade pizza night, but you could certainly make a large salad and have it as your main course. Yummmyyyy! 

Apple Cider Vinaigrette
1/2 cup extra virgin olive oil
1/4 cup apple cider vinegar
1/4 cup honey (I used local, raw honey, it was heavenly!)
1 clove garlic (minced)
1 teaspoon Dijon mustard
1/2 tsp. salt
1/4 tsp. pepper
Place all ingredients in blender and blend until smooth and creamy. Or place all ingredients in a bottle and shake until well combined.
