Meal Plan Week of 12/29 - 1/4

Whew! It has been a crazy few weeks with the holiday rush and starting the new job! After scrambling the past couple weeks to get all the Christmas preparations in order and of course staying up late with the hub on Christmas Eve, assembling the big Santa gift (we really could have used some elves for that!) -- I was thrilled to see the smiles on my kids faces Christmas morning! Truly magical -- I wish I could bottle moments like this and keep them forever.

On the job front, I am pleased to report that I absolutely love my job. The work is interesting and even more importantly, my co-workers are downright awesome! I cannot wait to get to know more of my co-workers and really start working on projects.

With my new schedule, it will be even more important to meal plan and stick to it. Between my work schedule, the kids activities, and the hub's work schedule, there won't be much room for error. I know meal planning will be a huge part of decreasing stress and keeping things running smoothly at home. With this in mind, I also have a couple meal planning goals for 2014:

1. Bring back a meatless day at least one day per week. I used to do Meatless Mondays regularly, but got out of the habit this past year -- It probably won't always be on a Monday, but flexibility is the key to success when trying to implement a new routine.

2. Plan lunches at the beginning of the week as well as dinners. This is important now that I will be packing a lunch for 4 people, 3 days a week. In the past, I never planned my own lunches and sent the kids with their lunches and my husband with leftovers. I often had time to make something from scratch or choose from leftovers. Now I really have to work hard to make sure I plan ahead of time for all our lunches.

So here you go, last Meal Plan of 2013/First Meal Plan of 2014!:

Sunday: Spaghetti, sausage meatballs, salad, homemade French baguette
We are having family over for dinner this night, so spaghetti is an easy meal to feed a crowd! I will be serving the meatballs on the side and serving a separate meat-free sauce to accommodate my Mom who doesn't eat meat. I will make a double batch of the meatballs/sauce to freeze.

Monday: Butternut squash-Black Bean-Swiss Chard Enchiladas, Cilantro-lime brown rice
New recipe -- if these are yummy, I will be sharing the recipe!

Tuesday: Sweet and Sour Chicken, fried rice, bok choy
New Year's Eve! This is a delicious meal -- better than take out!

Wednesday: Smoky Corn Chowder with Shrimp, fresh baked bread
I have been dying to make this and New Year's Day seems like the perfect opportunity!

Thursday: Leftovers

FridayHomemade Hamburger Helper, green beans

Saturday: Girls Night!!!! Yoga and dinner with my friends, so no cooking for me tonight. Can't wait!
