Meal Plan for the Week 12/15-12/21 and More News!

I'm very excited to share some news today! Things have been a little crazy in the Fresh Mama house the past few weeks and I have already shared one piece of exciting news via my facebook page, but in case you missed it...
I have been asked to blog on the baystateparents (local parenting magazine in Massachusetts) new website! They are launching at the end of December and I am so thrilled to be part of their blogging team. The name of the blog is "Fresh Mama, Healthy Family" and I will be sharing very similar information that you see right here on the Fresh Mama blog. This is a huge opportunity to help spread the Fresh Mama recipes and tips you enjoy reading on this blog. I will make sure to share the link when they launch and I hope you will check it out.

In other news... after 7 1/2 years of having the best job in the whole world, as a stay at home mom to my 2 boys, I will be re-entering the workforce! I will be working part-time for a local company, using my knowledge as an RN in a corporate setting. It will definitely be a transition in many ways, but I am ready to meet the challenge and balance it all.

As I planned my meals for this week, I already had to make some changes based on my new schedule. With two days in the office, I had to change my grocery shopping day --  although, one benefit of the new job is the grocery store right across the street, so I can always run in on my lunch break or my way home to grab a couple items! I will have to see how it goes and I'm sure I will try a few things before settling into a new routine.

Sunday: Ground Pork and Kale Stuffed Acorn Squash, salad

Monday: Caramelized Onion and Swiss Chard Quiche, fresh pineapple

Tuesday: Easy Crockpot chili
1 lb. ground beef. browned
1 green pepper, chopped (I will use frozen peppers from my summer CSA shares)
1 onion, chopped
1 whole hot pepper
3 cloves crushed garlic
2 cups black beans (or 1 15oz. can)
2 cups pinto or kidney beans (or 1 15 oz. can)
1 28 oz can whole peeled tomatoes
3-5 tablespoons chili powder
2 teaspoons cumin
1-2 teaspoons salt
1/2 teaspoon pepper
grated cheddar cheese (optional)
sour cream (optional)
avocado slices (optional)

1. Place cooked ground beef and all ingredients except cheese, sour cream and avocado in crockpot, stir well.
2. Cook on low 8-10 hours, stirring occasionally to break up the tomatoes.
3. Top with desired toppings.

Wednesday: Pork chops, roasted turnip, broccoli, applesauce

Thursday: Spaghetti with sausage and marinara, salad
Place sausage and marina sauce in crockpot 4-6 hours before dinner, simply boil pasta and dinner is served!

Friday: Stir-fry, brown rice, orange slices

Saturday: Homemade pizza or eat-out (we'll have to see how the week goes!)
