Meal Plan for the Week 12/1 - 12/7

Meal planning has been a life-changing experience for me. I have been an avid meal-planner for at least 3 years and now that our kids activities have pretty much taken over our schedule, I find it is essential to plan and be prepared for dinners every week. I usually start the planning process on Monday evenings
when we receive an email from the CSA with a list of what to expect in our weekly share. However, this week we don't have a delivery so I made my plan on Saturday.

When I make the weekly meal plan, I take a look at our schedule to see: what days do we have afternoon/evening activities?, do we have dinner plans with friends or families?, is my husband traveling during the week?. I also take a look in my freezer to see what veggies/meats I have on hand. I try to use what I have first and incorporate those into my meals before adding items to my grocery list. I might ask the hub or kids if they have any requests for the week and I also usually have a night for leftovers, homemade pizza or going out to eat. Most weeks I try a new recipe at least once if not twice during the week -- a side effect of my Pinterest addiction!

So here you go, this week's meal plan:

Sunday: Eggplant-Ricotta Lasagna, salad
I made this lasagna at the beginning of the fall and it has been in the freezer for about 8 weeks. I was randomly watching Food Network while folding laundry and saw Rachel Ray make this. It looked delicious and she said it froze well, so I used a CSA eggplant for the filling. Hopefully it thaws and reheats well. I will let you know how it goes!

Monday: Sweet and Sour Slow Cooker Pork Chops, scalloped potatoes, broccoli
I have been making these pork chops for over a year. Easy, tasty and the whole family loves them. The scalloped potatoes are leftovers from Friday night's dinner.

Tuesday: Chicken Parmesan with spaghetti squash, salad
This recipe is a new one for me. If it goes well, I will be doing a blog post. Wish me luck!

Wednesday: Slow-Cooker Honey Garlic Chicken, brown rice, bok choy or green beans
I love this recipe, it was a hit with the whole family. Of course, because I have a slight problem following any recipe exactly as written, I did change it up a bit. I used boneless, skinless chicken breasts, and substituted apricot preserves for the blackberry jam.

Thursday: Homemade frozen fish sticks, corn on the cob, mashed butternut squash, mixed veggies
I made the fish sticks last Friday night and froze half, I froze the corn from a fresh farm and my CSA over the summer, the CSA butternut squash is also frozen and I will probably toss it with some brown sugar and a little butter

Friday: Leftovers or dinner out

Saturday: homemade pizza, salad

I hope you find this helpful, I know having a plan each week decreases my stress level, makes it much easier to shop for the week in one shot and reduces the last minute trips to grab one or two items needed for a recipe. I do my best to use the Menu Planner app on my iPhone for grocery lists and tracking meal plans, this way I always have my grocery list on hand.

  1. Sounds great Lil. I can NEVER get anything to cook well in my crock pot. Such a bummer, my meat is always dry...and I just don't get it. Would love some tips, maybe I can try your recipe and do what you do and see if I get better results.

    1. I have some great crockpot recipes, Maryfrances! I find a good sauce and less cooking time gives the best results. I use my crockpot at least once a week! Stay tuned, more crockpot recipes coming...

  2. I have made that Honey Chicken too and we really enjoyed it.

  3. I usually look at the store sales and plan my meals based on what is in the fridge/freezer and then match it up to the sales. When Doug is home it is a crockpot meal. If the meal will take a bit to make, I prepare it the night before.
