Hubbard Squash - Oatmeal Muffins

If you have never baked with a winter squash before, please make these muffins your first winter squash bakery treat. They are sweet, moist and delicious! I made mine with Hubbard squash puree, but you could certainly substitute butternut squash or pumpkin.

When I received my Hubbard squash in my CSA box I was blown away, this guy was huge! In fact, the farmer sent us an email ahead of time to be prepared -- it was so big we wouldn't be able to cut it unless we roasted it first. Well, I went right ahead and made some puree, portioned it out and put it in the freezer. We did a little taste test at FMCC and all agreed the Hubbard squash is definitely the sweetest winter squash variety any of us had ever tasted. The puree itself is so rich and sweet, it tastes like it already has butter and sugar in it -- I think you could eat plain puree for dessert and satisfy your sweet tooth. Truly, the perfect ingredient for these muffins and my kids absolutely love them! I made mini-muffins, froze most of them and use them frequently in their lunchboxes.

Roasted Hubbard Squash
Hubbard Squash Muffins (Printable Version)
Preheat oven to 350 degrees
Grease mini-muffin or regular muffin tins
1 cup flour (I used 1/2 cup whole wheat 1/2 cup APF)
1 cup quick oats
1 tsp pumpkin pie spice
2 tsp baking powder
1/4 tsp baking soda
1/2 tsp salt
1/2 cup light brown sugar
1 egg
2 Tbs melted butter
Oatmeal Crunch topping
1/2 cup quick oats
1/2 cup brown sugar
1/2 tsp pumpkin pie spice
2 Tbs. melted butter
1. Mix oatmeal crunch toppings in small bowl and set aside
2. Mix flour, oats, baking powder, baking soda, pumpkin pie spice, and salt in large mixing bowl
3. Whisk egg, sugar, squash puree, and butter in separate bowl
4. Pour wet ingredients over dry and mix until well combined
5. Fill muffin tins 2/3 full and sprinkle oatmeal crunch topping on top
6. Bake mini-muffins 12-15 mins and regular muffins 22-25 mins until baked through and toothpick inserted in middle comes out clean. Makes 24 mini muffins or 12 regular muffins.
